Description
Fondant sugar made of sucrose and glucose syrup, with a snow white colour. Ideal to cover choux, éclair and othe patisserie, to provide them with a shiny topping that keeps its brightness even at freezing temperatures. Works well with hydrosoluable (water based) colouring.
